The Calamansi Muffin Mistake

I’ve had calamansi muffins on the brain for three days now, ever since I saw this hack of the Real Coffee Boracay muffins on Pepper.ph. So I thought I’d finally bake them today, regardless of my husband’s comments.

My friend Trisha had baked them a couple days ago, and she said that next time, she’d add a little more calamansi — so naturally, being armed with this exciting piece of intel, I was all “AHA! ME TOO!!!”

And ummm… I think we can all guess how THAT turned out.

Hehe. So I guess my diet is safe after all, because I can only eat about two bites at a time before I go off rushing to take a shot of SALT or something to counteract the taste.
Lesson learned: Don’t be a rebel. Just follow the recipe. And if you were too lazy to click through to the Pepper.ph site, here it is:
Real Coffee Boracay Calamansi Muffins (Pepper.ph Hack)
- 1/2 cup butter
- 1 cup sugar
- 2 eggs
- 1 1/2 cup all purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup milk
- 1/4 cup calamansi (NOT 1/2 CUP!!! Trust me)
Mix together dry ingredients in a bowl: flour, baking powder and salt. Set aside.
Mix together milk and calamansi in a bowl, set aside.
Cream butter and sugar for 2-3 minutes.
Add eggs one at a time and mix well.
Add in milk mixture and flour mixture.
Mix until well blended, don’t over mix.
Scoop in non stick muffin pans.
Bake in preheated 350 degrees Fahrenheit oven for 18-23 minutes.
